The Coquinas for this local delicacy are found on the long sandy beaches near Punta Umbria in the Golf of Cadiz where they are manually harvested by El Buscadors, fishermen who work chest deep in the surf. It is hard work, but the locals say it is worth it.
To accompany the Coquinas why not enjoy a glass of local wine – Condado de Huelva. Rumours say it is the wine Christopher Columbus took with him on his first journey to the Americas.
Ingredients:
(can be purchased from fruit & vegetable store and local supermarket)
- 1/2 kilo of coquinas (coquinas is a type of clams)
- 3 garlic cloves
- fresh parsley
- olive oil
- white wine from Condado de Huelva
- Salt
Method:
- Chop the garlic and brown them in a pan with a drizzle of olive oil.
- When they are golden add the coquinas and wait a couple of minutes to open with the heat.
- Then add the parsley, salt and a generous drizzle of white wine, stir well and cook a couple of minutes more.
- Ready to Serve
- Once cooked the coquinas should be eaten immediately whilst warm
