Boka Bay Seafood Pasta

Despite its small size, Montenegro’s traditional cuisine draws on many delicious flavours and culinary influences.

This simple to prepare recipe uses seafoods local to the protected waters of Boka Bay (Bay of Kantor) combined with local spices and ribbon pasta, reminding of the countries historic trading ties to its Adriatic neighbours.

Method:

  1. Heat together the butter and olive oil in a deep frying pan. Add the finely chopped onion and garlic and simmer for 2 mins on a medium heat. Add the seafood and stir in the wine until all of the juices have been absorbed. Season with salt and pepper and simmer for 20 mins. For extra flavour, add a handful of capers, olives or anchovies.
  2. To make the red sauce, add the tomatoes and simmer. For the white sauce, add the cream and simmer for 10 mins.
  3. Season with a pinch of cinnamon and nutmeg for a richer flavor and for an extra kick, add a pinch or two of cayenne pepper to taste.
  4. Cook the pasta until al dente, then mix in to the pan and sauce. Prijatno!
