A traditional Andalucian dish from the fishing port of Barbate on the Atlantic side of the Straits of Gibraltar.
It is a delicious, simple Tapas which is best enjoyed with some fresh bread and a glass of local Manzanilla wine.
Ingredients:
(can be purchased from fruit & vegetable store and local supermarket)
- 800 grams of tuna (Atún)
- 3 medium size onions
- 2 cloves of garlic
- 100 ml olive oil
- 1 tablespoon of sherry vinegar
- 1/2 glass of water
- 1/2 small spoonful of sweet paprika
- 1/2 small spoonful of dried oregano
- 1 bay leaf
- salt and black pepper
Method:
- Peel and cut the onion (julienne) and the garlic
- Cut the tuna into dices and season with salt and pepper to taste
- Heat 60 ml of olive oil (about 6 tablespoons) in a saucepan
- When the oil is hot, add the tuna and when it is brown, remove it and keep on a plate to add back in later
- Pour the remaining oil into the saucepan, 40 ml or 4 tablespoons and add the cut garlic. Leave them until they are golden brown.
- Once the garlic is golden, add the onion, bay leaf and half a teaspoon of salt.
- Leave on medium heat until the onion is tender and increase the heat and add the vinegar to simmer.
- Remove the pan from the heat and add the oregano and paprika and stir for 1 second.
- Finally, add water and tuna that was reserved. Leave on medium heat until the water evaporates.
- Check if the dish is well salted, if not, add more to the taste, and voila!, You already have a delicious dish of onion tuna ready to eat.
